This sandwich combines everything you love about a traditional grilled cheese with everything you love about a BLT sandwich. It’s piled high with seven ingredients – lettuce, tomato, bacon, onions, cheddar cheese, guacamole and chipotle mayo.

A homemade BLT sandwich with cheese is a great way to use fresh garden veggies. It’s a no-fail recipe that you will want to make again and again.

Serve this fancy blt with chips, a side salad or potato salad. It’s the ultimate grown-up grilled cheese!

What is the best cheese for grilled cheese?

Medium sharp cheddar cheese is my classic go-to for grilled cheese. But if you love the creaminess of American cheese, it’s also a good choice. Pepper Jack cheese or Monterey Jack cheese are another option.

Sometimes I use shredded cheese on my grilled cheese sandwich. Just be sure to use cheese freshly shredded from the block as it will be meltier and cheesier.

Variations

While we love to make this sandwich exactly as written, you can also substitute or add your favorite sandwich ingredients. Here are a few ideas:

  • Sauce: Using a delicious sauce adds the most flavor to a sandwich. You can substitute the chipotle mayo with traditional mayonnaise or use horseradish sauce.
  • Bread: Any type of sandwich bread will work for this recipe. We use whatever we have in the house, but sourdough also works great to make sourdough bread grilled cheese.
  • Other Ingredients: Adapt this sandwich to make it your own by adding other sandwich fillings such as baby spinach, caramelized onion, fried egg, sliced turkey breast, pickled onions, etc.

Recipe Tip

When you assemble the sandwich, after spreading the mayo on the bread, place the lettuce down on the bread, then the tomato towards the middle of your sandwich. This helps keep the sandwich crisp and prevents it from becoming soggy.

BLT Grilled Cheese

Ingredients 

For the chipotle mayo:

  • 1/4 cup mayonnaise
  • 1 chopped chipotle chili in adobo sauce

For the sandwich:

  • 4 slices bacon, (use up to 6 slices)
  • 4 slices loaf bread
  • 1/4 cup loose leaf lettuce
  • 4 slices red onion
  • 4 slices tomato
  • 2 slices sharp cheddar cheese
  • 4 tablespoons guacamole
  • 2 tablespoons butter, room temperature

Instructions 

To make the mayo:

  • In a food processor combine chipotle chili and mayonnaise. Pulse until smooth; set aside.

For the sandwich:

  • Heat a large skillet over medium-high heat. Add bacon and cook until crispy, about 5 to 7 minutes. Remove from pan and set aside on paper towel-lined plate.
  • Heat a clean pan over medium heat. Butter one side of each slice of bread. Spread a layer of chipotle mayo over each slice of bread. Layer the lettuce, onion, tomato, cheese and guacamole over 2 slices of bread, dividing ingredients evenly. Top with remaining bread slices.
  • Grill over medium heat until golden brown and the cheese has melted, about 2 to 3 minutes per side.

Notes

GLUTEN FREE: Use gluten free bread to make it gluten free.
SAUCE: Substitute the chipotle mayo with traditional mayonnaise, horseradish sauce or any of your other favorite sandwich sauces.
