Now that children are out of school and summer is here, most of us don’t want to spend a lot of time preparing meals. We would rather head outside and enjoy the beautiful weather. In the summer, I like to keep meals quick and easy. Baked Brie with Balsamic Strawberries comes together in less than 15 minutes. It is a great summertime appetizer to serve at your next dinner party. Or, you can be like me and just make it all for yourself to enjoy after a long day of work.

The best part about this recipe is that you can cook the brie right in the wooden packaging it comes in. Just remove the top wooden lid, slice the rind off the top of the brie and bake in the oven on a baking sheet. I serve it right out of the oven in the container.

Baked Brie with Balsamic Strawberries

Ingredients 

  • 2 cups fresh strawberries, cut into large chunks
  • 3 tablespoons sugar
  • 2 tablespoons balsamic vinegar
  • 8 ounce round of brie

Instructions 

  • Preheat the oven to 350 degrees F. In a medium saucepan over medium heat, add the strawberries, sugar and balsamic vinegar. Cook stirring occasionally while the juices cook down slightly and the strawberries soften, about 5 to 7 minutes.
  • Meanwhile, remove packing from brie round. Slice the top rind off of the top of the brie. Return the brie round to the bottom of it's wooden packaging container. Place on a baking sheet and bake 7 minutes. Top with balsamic strawberries and bake an additional 3 minutes. Serve with bread or crackers.

  1. Made this last weekend. The flavors were great but unfortunately the little wooden container separated in the oven. Also, there was about 3 times too many strawberries to put on top of the brie.

    Will try again in a traditional brie baker!

  2. OMFG. I can bake the brie in the container it comes in? How did I NOT know that? Guess you do learn something new every day, LOL. I make a version of this for Thanksgiving with a cranberry “chutney” and I’ve made one with blueberries… I am SO going to have to give this a try and thanks for the new info!

  4. Now this is my kind of appetizer! Add in some champagne and a few of my favorite girlfriends on a warm summer night and I’m a happy girl! Love that you did balsamic strawberries. That flavor sounds perfect with the creamy brie.
