  • Delicata Squash: This squash is available in the summer and fall months, especially the months of September, October and November. You can eat the entire squash, including the skin.
  • Maple Syrup: You can omit the maple syrup or use brown sugar instead.
  • Extra Virgin Olive Oil: You can substitute with avocado oil, if needed.
  • Ground Cinnamon: You can omit, if desired, but the cinnamon adds a delicious subtle flavor.

Cooking Delicata Squash

  1. Prepare the squash. Clean the squash and use a sharp knife to cut both ends off. Slice in half lengthwise. Scoop out the seeds and then cut each half into 1/4″ pieces.
  2. Toss with other ingredients. Place the squash in a bowl with olive oil, maple syrup and cinnamon. Toss to coat evenly.
  3. Roast in the oven. Spread the squash out on a large baking sheet lined with parchment paper. Roast in the oven for 15 to 20 minutes at 425 degrees Fahrenheit, then flip and roast another 10 to 15 minutes or until the squash pieces are golden brown and tender.

To make savory delicata squash, toss the squash with savory spices, like curry powder, cumin or dried herbs like thyme or rosemary instead of the cinnamon. You can also add freshly ground black pepper and kosher salt, if desired.

Ingredients 

  • 2 medium Delicata squash
  • 1 tablespoon pure maple syrup
  • 1 1/2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cinnamon

Instructions 

  • Preheat oven to 425 degrees F. Line a large rimmed baking sheet with parchment paper and set aside.
  • Clean the squash, cut both ends off and slice in half lengthwise. Remove the seeds and then cut each half into 1/4-inch thick slices.
  • Place the squash slices in a large bowl. Drizzle with olive oil and maple syrup and sprinkle with cinnamon. Toss to coat.
  • Spread squash slices evenly on prepared baking sheet. Place in the oven and roast for 15 to 20 minutes. Flip and roast for another 10 to 15 minutes or until golden brown and tender.
