These no bake cookies are made with a few simple ingredients and can be enjoyed for breakfast, snack or dessert!

In a heated saucepan, whisk together coconut oil, peanut butter, maple syrup, and banana. Bring mixture to a boil and then remove from heat.

Whisk in vanilla extract. Add oats, cinnamon, nutmeg, and salt. Fold. Let cool, then fold in chocolate chips.
