This strawberry cucumber salad is a great way to use fresh garden produce. Grab some fresh berries and cucumbers at your local farmer’s market and make this salad.

Besides cucumbers, strawberries and red onion, you will only need a few additional ingredients for the dressing.

  • Fresh Strawberries: Choose in-season organic strawberries for the best flavor.
  • Mini Cucumbers (also called Persian Cucumbers): You can substitute with English cucumber or standard cucumber, but we love the texture and flavor of mini cucumbers.
  • Red Onion
  • Lemon: Adds fresh flavor to the dressing. You can substitute with lime juice.
  • Extra Virgin Olive Oil
  • Balsamic Vinegar: Use a high quality balsamic dressing.
  • Salt
  • Honey (optional): Add honey if you prefer a sweeter dressing to make a honey balsamic dressing.

We prefer a light dressing for this salad. If you want more dressing, you can double the dressing ingredients.

How to Make Strawberry Cucumber Salad

Everything for this salad comes together in two bowls – one bowl to mix the dressing and another for the salad.

  1. Add all of the chopped ingredients a large bowl – strawberries, cucumbers and red onion. I cut the cucumbers into small slices and each strawberry into fourths.
  2. Prepare the dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, lemon juice and salt.
  3. Combine everything: Add the dressing to the bowl with the chopped ingredients. Toss well to combine.
  4. Serve: This salad tastes best when served immediately. You can also store in a sealed container in the refrigerator for up to 24 hours.

Variations

  • Add fresh herbs: Elevate the fresh flavor of this salad by adding chopped herbs like fresh mint or basil.
  • Add cheese: Cubed feta cheese adds a salty flavor. Mini mozzarella balls or goat cheese are also a great choice.

Storage

This recipe doesn’t keep well for very long. We recommend preparing it fresh. You can store it in an airtight container in the refrigerator for up to 24 hours. After 24 hours, the strawberries start to soften and the cucumbers will start to get watery.

Ingredients 

  • 1 pound fresh strawberries, hulled and quartered
  • 1 pound mini cucumbers, thinly sliced
  • 1/2 small red onion, diced
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon kosher salt
  • 1 to 2 teaspoons honey, (optional)

Instructions 

  • Add the chopped strawberries, cucumbers and onions to a large bowl.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, lemon juice and salt. Taste, then whisk in the honey if you prefer the dressing to be sweeter.
  • Add the dressing to the bowl with the strawberries and cucumbers; toss well to combine.
  • Serve immediately or store for up to one day in a sealed container in the refrigerator.
