Lavender syrup is made with 3 ingredients – water, sugar (or honey) and lavender! Create fresh lavender flavor with this homemade syrup.

Homemade lavender syrup is easy to make and more flavorful than anything you can buy. It adds a delicious sweet floral flavor to drinks or drizzle it over a sweet treat like pancakes or crepes to add subtle lavender flavor.

What Type of Lavender to Use

Use fresh lavender blossoms or dried lavender buds. It should be marked as “culinary grade” which means that it is made for consumption. If you are using fresh lavender, use organic buds that have not opened or flowered.

If you are looking for a purple color for the syrup, use the freshest purple buds you can find and do not add vanilla.

Quick Recipe Tips

  • Use vanilla if you want a lavender vanilla flavor. Or omit the vanilla for a simple lavender flavor.
  • This recipe makes 1/2 cup. If you want more, double or triple all of the ingredients.
Heating the lavender buds, sugar and water in a saucepan before stirring in vanilla and straining through a mesh strainer.

Why is my syrup dark and not purple?

Natural lavender is light or dark brown in color. Sometimes you can achieve a purple hue if you use dark blue buds. Even if it doesn’t look purple, it will taste like lavender. Taste is most important! If color is important, then I recommend using the freshest lavender buds you can find with no honey or vanilla. You can also add a bit of natural food coloring, such as one drop of red color and one drop of blue.

Why is my lavender syrup bitter?

Lavender syrup should not taste bitter. If it does that means it either cooked too long or at too high a temperature. You should not boil the mixture, simply let it simmer on the stove.

How long does lavender simple syrup last?

Lavender simple syrup will last up to 3 weeks when store in a sealed container in the refrigerator.

Lavender Simple Syrup (with or without Vanilla)

Equipment

  • Saucepan
  • Fine Mesh Strainer or Cheesecloth
  • Mason jar or small airtight container

Ingredients 

  • 1/2 cup granulated sugar, or honey
  • 1/2 cup water
  • 5 teaspoons dried lavender buds
  • splash of vanilla extract, (optional)

Instructions 

  • In a small saucepan, combine sugar, water and lavender.
  • Bring to a simmer over medium heat and cook for about 5 minutes or until the sugar has dissolved. Remove from heat and stir in the vanilla, if using. Allow to cool.
  • Strain syrup through a fine mesh strainer into a jar to remove lavender buds and set aside.
  • Store in a sealed container in the refrigerator for up to 3 weeks.
  • One of my favorite ways to use this lavender is in a Lavender Latte!
