The official start of summer is only a week away! I’ve already started enjoying my favorite things about summer, including long summer days, new adventures and the best summer produce. Summer produce is always my favorite because it’s refreshing and packed with crisp flavor. Cucumbers are always the best when freshly picked from my summer garden. Today, I’m sharing an easy salad recipe that is great for an entire lunch or as a side for dinner. Strawberry, Cucumber and Mozzarella Salad is made with only five ingredients and takes less than ten minutes to prepare. Spiralized cucumbers are used for a fun twist too!
