Sunny skies, emerald green water, sand under my toes and a fresh vibrant salad. I love everything about summer. Despite the heat and humidity, I never want summer to end. Fortunately, you can enjoy the flavors of summer no matter what time of the year. This Strawberry Tropical Fruit Salad with Strawberry-Ginger Dressing is summer in a bowl. Fresh fruit, veggies, nuts and quinoa create a meal that is good for you. You will want to make this salad over and over again through winter, spring and fall.
As part of the Eat the Rainbow Recipe Challenge, Naturipe challenged me to create a delicious salad featuring juicy red strawberries and a vibrant orange color. I love any excuse to add fruit to a salad so I created this salad with fresh strawberries, mango, papaya, nectarines and macadamia nuts. I also added some baby spinach and tri-color quinoa to create a nutritious, vibrant and colorful meal.
The best part of this salad is the strawberry-ginger dressing. It is sweet but not too sweet and compliments the other flavors. Even if you don’t like ginger, you will love this dressing. The ginger enhances the flavor of the strawberries. The sweet taste of the honey combined with the strawberries, ginger, olive oil and apple cider vinegar creates a creamy, flavorful and fresh salad dressing.

Strawberry Tropical Fruit Salad with Strawberry-Ginger Dressing
Ingredients
For the salad:
- 4 ounces spinach
- 1/2 cup cooked quinoa, I used tri-color
- 1 cup chopped strawberries
- 3/4 cup chopped mango
- 1/2 cup chopped papaya
- 1/2 cup chopped nectarine
- 1/2 cup macadamia nuts
For the strawberry-ginger dressing:
- 1/2 cup strawberries
- 1/4 cup olive oil
- 1/2 piece of ginger, peeled and chopped
- 1 tablespoon raw apple cider vinegar
- 1 tablespoon honey
Instructions
- Add all of the ingredients for the dressing (strawberries through honey) to a food processor. Pulse until well blended.
- In a large bowl, add the spinach, quinoa, strawberries, mango, papaya, nectarine and macadamia nuts. Stir to combine. Divide salad evenly between two or three bowls. Top with strawberry-ginger dressing and serve.
