Brussels sprouts casserole is a simple side dish that is creamy and cheesy! It is lower carb and made without breadcrumbs.

Blanch halved brussels sprouts. Remove from pot, drain, rinse, and set aside.

Fry bacon. Remove from pan and set aside. Chop. Add the shallots to the bacon grease and saute. Add the garlic and saute. Stir in the flour and whisk.

Add milk and stir. Cook. Add salt, fresh thyme, and nutmeg. Add cheddar jack cheese. Add cooked bacon. Season to taste.

Stir the Brussels sprouts. Transfer them to casserole dish. Sprinkle with bacon and Parmesan cheese. Bake.
