Mango Popsicles with Chocolate Drizzle
This tasty frozen treat is made with fresh mango, yogurt and a few other basic ingredients!

- 2 1/3 cups peeled and diced mango
- 10 ounces plain non-fat or 2% Greek yogurt
- 3/4 cup milk of choice
- 2 tablespoons honey
- 3/4 teaspoon vanilla bean paste or extract
- 3 ounces good quality dark chocolate melted
In a blender or food processor purée 2 cups of the diced mango, yogurt, milk, honey and vanilla until smooth. Pour the mixture into popsicle molds.
Swirl the remaining 1/3 cup of diced mango into each popsicle mold using a wooden skewer or knife.
Insert the popsicle stick and freeze for at least 4 hours or overnight.
Remove the frozen popsicles from the molds and place them on a baking sheet.
Drizzle with the melted dark chocolate then place them back in the freezer to harden.
Store the finished popsicles in a single layer in a freezer bag or other airtight container.
- This recipe makes 8 to 10 popsicles, depending on the size of your popsicle mold.
STORAGE
Leftover popsicles can be removed from their popsicle mold and stored in an airtight container or freezer-safe bag in a single layer in the freezer. They will freeze well for up to 3 months. You can also wrap each one in plastic wrap to prevent freezer burn if you plan to enjoy them closer to the 3-month mark.
