For the salad:
- 4 ounces spinach
- 1/2 cup cooked quinoa I used tri-color
- 1 cup chopped strawberries
- 3/4 cup chopped mango
- 1/2 cup chopped papaya
- 1/2 cup chopped nectarine
- 1/2 cup macadamia nuts
For the strawberry-ginger dressing:
- 1/2 cup strawberries
- 1/4 cup olive oil
- 1/2 piece of ginger peeled and chopped
- 1 tablespoon raw apple cider vinegar
- 1 tablespoon honey
Add all of the ingredients for the dressing (strawberries through honey) to a food processor. Pulse until well blended.
In a large bowl, add the spinach, quinoa, strawberries, mango, papaya, nectarine and macadamia nuts. Stir to combine. Divide salad evenly between two or three bowls. Top with strawberry-ginger dressing and serve.
